A monthly cooking class by Curry Masala is offering more than a dash of spice for local foodies and fans. The restaurant owners take time away from their kitchen to introduce area cooks to a wealth of family recipes and a cuisine as varied as their East Indian homeland.

Years ago, two people requested recipes for General Tso’s Chicken. We never received a suitable response. Then the editors of Cook’s Illustrated got into the act. In the recently published “The Best of America’s Test Kitchen,” they take on the Chinese restaurant staple.

“When I die do bury me deep / with a pound of boudin at my feet / a bag of cracklins in my hand / and let me eat my way to the promised land.”

We asked Stephen E. Kemmet, general manager of Bulls & Bears Restaurant in downtown Hagerstown, to come up with recipes to represent the teams in Sunday’s Super Bowl XLIII.

If you ask their owners the secrets to their longevity, don’t expect mention of secret recipes or clever marketing.
