The picture on the wall says it all – there’s Redding restaurateur Jim Gironda, age 5, learning the art of pasta-making from his grandmother in her kitchen on Chicago’s South Side. “One grandmother was the best baker in the world, the other the best cook,” Gironda recalls. Since he was discharged from the Marines in 1969, he dreamed of opening his own restaurant and using some of the recipes
